As you stated above, defining a set rotation will save time. My friend (E-Honda (http://ehondaspokerchronicles.blogspot.com/)) runs a $5/$10 Limit HOE game down in the Washington, DC area and we fill up the table every Friday Night. If you eliminate the NL/PL games then you don't need to worry about capping the buy-in.
The $5/$10 HOE is a played with Pink $2.50 Chips, very fun.
To add one more thing, setting an end time of five hours will cause more problems than it will solve. I've been running a home game (http://wedsnights.blogspot.com/) for over 18 months now, and when someone wants to hit-and-run, they're gonna do it. When people want to play for 14 hours, they're gonna do it.
